How about a bit of raiding?
Fire a shell across the bows of an enemy merchantman to make him heave to, launch the seaboat, confiscate the logs and charts, amongst other things, and disembark the officers and men. The officers will become 'guests' of the raiders' captain and the crew will be sent to the nearest land. The merc will then be sunk.

Nice idea - or maybe you could capture them & hence "convert" them to your faction. If every ship had a "surrender" option it'd certainly mix things up on the water!

Thats a great Idea! You could even factor in their chance of surendering to how well their faction is doing in the conflict at the time.

I really don't think that'd really add anything to gameplay, really. Unless the MP had some sort of factional resource/resupply system. Overall it sounds like something that just adds on, doesn't improve.

I think it's a great idea too. Free supplies in the middle of a battle, what could be better?

In the middle of a battle? Are you daft?
You're not going to be heaving crates of ammo over the rail of a merchantman and into your deck guns ingame in a combat situation.
Destroying a convoy escort as a mission objective and then the sucess improving your faction logistical situation would mean you'll have a full rack of torpedos next mission is how it would be done.

capturing a ship sounds more like piracy then warfare to me, but commerce raiding just sounds cool, I believe the Bismark and Prinz Eugen originally sortied to raid Atlantic shipping

There's nothing impossible, improbable maybe but certainly not impossible.
I'd assume you'd have to be picky about which ship you raid and when, but it would definitely be interesting.
