I was experiencing the same problem espically with being new to Rising Tide Gold.
I learned from reading this forum how to ease my frustration on sinking subs.
When engaging a sub I first mark it as my target, then open the TAC and be sure you set the TAC to 500m, with the TAC it will show you when the target is in range, (once the TAC is opened I don't bother to look at the main screen until my objective is eliminated) when droping charges I use the 170 meters set and allow for the my speed and the subs speed for my spread so when the charges reach the target they will go boom.
With the easy training surface vessels going after subs be sure to be moving at least full speed otherwise you will damage your vessel, on the training missions when the tip of the sub reaches just about my stern I drop charges. On harder levels allow for speed and distance.
For those who are new to the game like myself a good tip is to use PIVOT, pivot port or starboard to meet the approaching target.
I would like to also thank this forum for all the help I have recieved it is a great site and please keep up the great work.
Hope this helps.
FLETCH.

I find no major difference in sub-hunting between the original and Gold versions.
Try setting you DCs to around 140 and set the DC trigger increment to 10 meters.
